Grilled Chocolate Cake

We were having another "Dinner at 8pm" and I decided that I wanted to make dessert on the grill so I made up my mind to attempt chocolate cake and the grill. It turned out lovely and we enjoyed it with some homemade vanilla frozen yogurt. It didn't take very long to whip together either, which is always a perk!
  • 6 tablespoons chocolate chips
  • 1/2 cup heavy whipping cream (half and half would probably work as well)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup flour
  • 2 tablespoons cocoa powder, divided
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 (7 oz) glass ramekins, buttered

Directions

  1. Measure 1/2 cup whipping cream in a glass measuring cup, add chocolate chips and place in the microwave for 1 minute. Remove and stir until chocolate chips are thoroughly combined with the cream. Set aside.
  2. In a small bowl, whisk together flour, 1 tablespoon cocoa powder, salt, and baking powder. Set aside.
  3. Generously butter your ramekins, dust the bottom and sides with the remaining cocoa powder.
  4. Now, add your chocolate/cream mixture to your dry ingredients and begin to combine. Then add your egg and thoroughly whisk. Pour batter into ramekins and place the ramekins on the outside edge of your grill grate. 
  5. "Bake" 10-12 minutes depending on the temperature of your grill (we had already cooked up our steaks and let the grill sit for about 10-15 minutes before placing the cakes on). Remove to cool for 10 minutes. Take the cakes out of your ramekins and enjoy with some frozen yogurt, ice cream, or whipped cream.
